Ingredients
2 cups pancake mix
1 cup milk (dairy or plant-based)
1 large egg
1/4 cup vegetable oil or melted butter
2 tbsp sugar (optional)
1 tsp vanilla extract
Instructions
Preheat oven to 375°F (190°C).
Line or grease a standard 12-cup muffin tin.
In a large mixing bowl, combine pancake mix, milk, egg, oil or butter, sugar, and vanilla extract.
Stir until just combined—do not overmix.
Fill each muffin cup about 2/3 full with batter.
Bake for 15 to 18 minutes, or until golden and a toothpick inserted into the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack.
